Another easy to assemble recipe idea using a Harding’s Rotisserie Chicken! Try it tonight!
CHICKEN & GREEN CHILI ENCHILADAS
1 Cup Chopped Yellow Onion
1 Tbsp Olive Oil
1 Tsp Minced Garlic
3-1/2 C Chopped Rotisserie Chicken
2 (4.5oz) Cans chopped Mild Green Chilies, drained
1 Tbsp Chopped fresh Cilantro
3 (10oz) Cans Enchilada Sauce, divided
2 Cups Shredded Four Cheese Mexican Blend Cheese
8 10″ Burrito sized Flour Tortillas
Step 1) Preheat oven to 425. Saute onion in hot oil in a 3-1/2 qt sauce pan over medium heat for 8 minutes or until tender; add garlic and saute another 2 minutes.
Step 2) Stir together onion mixture, chicken, chilies, cilantro, 1-1/2 cups enchilada sauce and 1 Cup of cheese.
Step 3) Spoon 1/2 cup chicken mixture down the center of each tortilla; roll up tortillas and place seam side down in a lightly greased 13×9 baking dish. Pour remaining enchilada sauce over tortillas. Sprinkle with remaining 1 cup of cheese.
Step 4) Bake, covered, for 20 minutes. Uncover and bake 10 more minutes or until cheese melts and is golden brown.
