ROMAINE & AVOCADO SALAD
SALAD:
1 Head Chopped Romaine
1 Avocado
1/2 Pint Cherry or Grape Tomatoes
1/4 Large Red Onion, thinly sliced
1 Tbsp Chopped fresh Cilantro (optional)
DRESSING:
2/3 Cup Greek Yogurt
1 Tbsp Olive Oil
1 Tsp Minced Garlic
2 Tbsp Finely Chopped Kalamata Olives
Juice from 1/2 Lemon
Salt & Pepper to Taste
TOPPING:
1/4 Cup Crumbled Bacon
Step 1) Combine all of the salad ingredients in a bowl, give a quick toss and set aside.
Step 2) In a separate bowl, combine all dressing ingredients and whisk until combined.
Step 3) Just before serving, stir the dressing in with the salad. Top with crumbled bacon.
Make ahead tip – The dressing will keep in the fridge for up to 3 days. Fresh shredded parmesan is also nice on this salad. I list the cilantro as optional because some people don’t care for it. This is a tasty salad either way… Enjoy!
